Ingredients

  • 1 hardboiled egg, peeled and diced

  • 2 Tbsp mayonnaise

  • 1/2-1 tsp Dijon mustard

  • 1/4 tsp paprika, sweet or smoked

  • 1/4 tsp fresh chives, minced

  • Salt and Pepper to taste

Instructions

Combine all ingredients in a small bowl, mixing well to combine. Serve between slices of (gluten free!) bread, as filling in a lettuce wrap, or over lettuce as a salad.
